Yamashiro Town is located in the Kaga region, an area rich in seasonal produce supplied by the nearby sea, rivers, mountains and farms.
Using an abundance of local ingredients, we try to bring out their fullest flavor for a pure and natural taste.
The dishes are served on Kutani-ware porcelain, Yamanaka lacquerware, and other items carefully selected by the proprietor.

Snow Crab - A Winter Delicacy

Ishikawa prefecture is famous for its snow crabs, which are caught throughout winter in the Sea of Japan.
The warm and cold currents meet in the seas off the coast of Kaga, and thanks to the seawater being rich in nutrients, the crabs landed at the Hashidate fishing port are considered to be of the highest quality around.
There are many ways to enjoy the crab's tender meat and delicate flavor, including raw, grilled, boiled, or in a hot pot.

Rosanjin Lives On Through His Artwork

北大路魯山人Kitaoji Rosanjin

Connection to Araya Totoan

Kitaoji Rosanjin was a world-renowned artist of the early 20th century who became highly accomplished in a multitude of artistic fields including seal engraving, calligraphy, and painting. He also became a leading gourmet and restaurateur of the time.
Rosanjin was also famous as a ceramist, having learned the intricacies of the craft at the Suda Seika Pottery Kiln whilst staying at Yamashiro in 1915.

The 15th generation owner of the Araya Inn at that time, Genemon, was an ardent lover of the arts, and together with other innkeepers in the area became close friends with Rosanjin during his stay in Yamashiro. Recognizing his talent and potential as an artist, they supported his career in its early stages by ordering calligraphy, paintings, and signboards for their inns.

Today, the inn still has some works attributed to Rosanjin, including a red-painted plate said to be his first ceramic work of art, and a traditional screen depicting a crow cawing at daybreak, which is associated with a local folk-tale about the origins of the hot springs at Yamashiro Onsen.
